irish potato + leek soup

2 tlbs olive oil (any oil is fine really)
2 cups chopped leeks
2 stalks celery diced
1 small onion diced
2 cloves garlic minced
4 medium potatotes chopped
4 cups veg stock
1 tsp salt
1/2 tsp pepper
1/2 tsp dried thyme
1 1/2 cups light cream (although full cream is nicer)
2 tbls fresh parsley, dill + tarragon

in a large saucepan, heat oil. add leeks, celery, onion + garlic. saute till soft.
stir in veg stock or water, potatoes, salt, pepper + thyme; bring to boil. simmer for 20-30 mins until potatoes are soft.
blend then add cream + herbs
