pavlova

6 egg white (at room temperature)
1 1/4 cup caster sugar
2 tsp cornflour
1 1/2 tsp white vinegar
1/2 tsp vanilla extract

heat oven 120˚C
brush 24cm dia tray with butter + dust with cornflour/icing sugar mix
whisk eggs till soft peaks form
add sugar till dissolved. test by rubbing mixture between fingers + its smooth
add cornflour, vinegar + vanilla
put in a circle on tray with raised sides
cook for 90 min. once cooked. leave door slightly ajar or keep door closed till completely cooled
