cabbage salad/ 2 minute maggi noodle salad



1 package of maggi noodles, crumbled, toasted
½ head cabbage, finely chopped (i like to have both red + white mixed)
4 spring onions, chopped
½ cup sliced toasted almonds or peanuts
½ cup toasted sesame seeds

mix all ingredients together except the ramen noodles and nuts. refrigerate.

dressing:
flavor packet from the noodles
3 tbsp sweet flavoured vinegar (i used Susan's Bay Plantation Pineapple Vinegar)
½ tsp of pepper
juice of 1 lime/lemon
1 tbsp soya sauce
Oil

sprinkle noddles, nuts and drizzle salad dressing over salad and serve immediately

  • the noodles is available from any supermarket. 
  • spring onions and white english cabbage are easily available at the market. 
  • i like to buy my almonds, peanuts and semase seeds from lazy chefs in flagstaff. phone number 310 0220. most of the times they sell lemons, fresh basil and lemongrass

here is another variation recipe of the same salad (i can't decide which recipe i like more)

4 tbsp rice vinegar
6 tbsp sugar
2 tsp salt
1 tsp pepper
1/2 cup olive oil
1/2 cup sesame seeds roasted
1/2 cup almond chopped + roasted
1/2 english cabbage white/red shredded

Mix all ingredients except the seed. Add seeds just before serving.

A variation to this is to add the raw 2 minute maggi noodles to the salad just before you add the seeds. The noodles to be crushed up into little pieces.
