vermicelli noodle salad with thai dressing

noodle salad

•  400g cooked vermicelli noodles, cooled
•  100g wombock cabbage, finely shredded
•  2 carrots, peeled and cut into matchstick sized pieces
•  2 sticks celery, peeled and finely sliced across the stalk
•  6 spring onions, finely sliced on an angle
•  20g sesame seeds
•  ½ bunch coriander leaves, picked
•  ½ bunch mint leaves, picked and torn

dressing
•  ½ clove garlic, finely crushed
•  ½ mild red chilli, finely crushed (i took out the chilli so that the girls could eat it)
•  2 teaspoons palm sugar, finely grated
•  2 tablespoons dark soy
•  2 tablespoons lime juice
•  1 teaspoon fish sauce
•  6 tablespoons olive oil

Place all the dressing ingredients in a bowl and whisk unti the sugar dissolves into the dressing.  Gently combine all the noodle salad ingredients together. Pour the dressing over the noodle salad mix.

  • wombock cabbage, carrots, celery, spring onions, correinder leaves, mint, red chillies and like are fresh easily available at the local market. 
  • palm sugar, dark soy, fish sauce and semase seeds from lazy chefs in flagstaff. phone number 310 0220.
  • i like to buy olive oil in bulk from cost u less
  • if you have the time, going to turners + growers in vatuwaqa is a good place to buy your imported fruits and vegetables. their system is not designed for retail so it can take you from 30min to 1 hour to do your shopping.
