kumala mash


3 medium size orange kumala (kumra / sweet potatoes)
freshly squeezed juice of 2 oranges
1 tablespoon butter

peel and slice kumala and boil in water till soft.
drain water and add butter. let it sit for a couple of minutes before you add the orange juice and mash.

yummy served with poached fish and steamed brocolli (best served hot)


local shopping tip:
  • there are three different type of kumala/sweet potatoes available at the local market. the larger rounder variety is purple on the outside but white on the inside. the purple and orange variety are smaller and white on the inside and their respective colours inside. the vendors usually place a cut piece of kumala at the top of the heap to indicate the type of kumala it is.
