ox tongue casserole


1 fresh ox tongue
2 onions sliced
2 bay leaves
3 large sprigs parsley
1/2 lemon sliced
6 whole peppercorns
1 tsp salt

add all above ingredients in a pot + simmer till tongue is soft taking care not to let it get too soft (approximately for an hour)

sauce1 tbsp butter
1 tsp flour
1/2 cup vinegar
1/4 cup red wine
1/2 cup sugar
1/4 tsp ground cloves
1/4 tsp ground cinnamon
1/4 cup blanched almonds
1 cup prunes (soaked in water for 3hrs)
1/2 cup seedless raisin/sultana
1/4 tsp mixed spice

method
prepare white sauce with butter, flour, vinegar and red wine.
add spices and fruit
slice cooked tongue
add slices to sauce and simmer for about 20 minutes

we served this with jasmine brown rice, peas + bean. at first i though...ew..ox tongue but trust me - you couldn't tell. it's also one of those meals that you can only have once in a while as it is very rich. try it - you won't regret it
