lime + coconut tart

This recipe was given to me by a friend a couple of years ago – it is yummy


  • 1 1/3 cup plain flour
  • 1/4 cup icing sugar
  • 165g butter (chopped)
  • 2-3 tablespoon iced water
  • 3/4 cup caster sugar
  • 2 teaspoons finely grated lime rind
  • 1/2 cup lime juice
  • 1/2 cup coconut cream
  • 1/3 cup flaked coconut (lightly toasted)


  1. sift the flour + icing into a bowl. add the butter + rub in with your fingertips until the mixture is crumbly. add the water + mix with a knife until the mixture is evenly moistened. gather the dough together then roll out to fit a 23cm pie dis. refrigerate for 30 minutes.
  2. preheat the oven to 180°C. Line the pasty shell with a sheet of baking paper, + fill with some dried beans or rice. bake for 15min, remove the paper and beans aside to cool completely.
  3. place the sugar, rind, lime juice + coconut cream into a mixing bowl, + add the eggs. whisk together lightly, until just combined. pour into the pastry shell, then bake for 30 min, until the filing is just set. cool to room temperature, then sprinkle lightly with the coconut.
