lemon tapioca pudding

1 cup seed tapioca
5 cups water
1 cup sugar
1 tbsp butter
2 tbsp golden syrup
1 lemon - juiced + rind grated

in a large saucepan, combine tapioca + water. bring to boil then reduce to low heat. stir frequently till tapioca becomes clear.
with a wooden spoon stir in sugar till dissolved then add remaining ingredients.
pour mixture into one or individual bowls. refrigerate till set. serve with cream
