tanya's veg risotto

2 tlbs olive oil
2 cloves garlic - minced
1 medium onion
1 1/2 cup short grain rice
1/2 cup white wine
2 1/2 cps chicken stock
1 cup boiling water
200g green beans chopped
1 bunch asparagus chopped
1/2 cup basil
180gm baby bocconcini halved
40gm butter
1/2 cup parmesan cheese grated

in a large microwave safe container, place oil, garlic onion+. stir and cook uncovered for 2 min.
add rice, stir and cook for 3 min
add wine, stir and cook for 2 min
add stock + water, stir, cover and cook for 10 min
add beans stir cook for 5 min
add asparagus stir + cook for 3 min
add salt, pepper, tomatoes, bocconcini, parmesan, basil and butter. stir and stand for 5 min
