ton's chocolate mousse

125gm dark chocolate
1 tbsp brandy
4 eggs separated
1 cup cream

chop chocolate and melt in a double boiler or in a bowl over a saucepan making sure not to get any water into chocolate
remove from heat, cool slightly. gradually add brandy and egg yolks. beat until mixture is smooth and thick.
whip cream (do not over-whip). fold into chocolate.
beat eggs whites (again don't over-whip or it will be hard to fold in). fold into mixture half at a time. spoon mixture into individual cups or one bowl.
best chilled overnight. can served with fresh cream on top
