chicken minestone
30gm butter
500gm chicken thigh fillets
1 onion chopped
1 clove garlic crushed
2 bacon rashers
1 stick celery
1 carrot chopped
410gm can tomatoes
310gm can red kidney beans
3 cups chicken stock
1/3 cup small pasta
2 tbsp chopped fresh oregano
1 tbsp chopped fresh parsley
heat butter in pan, add chicken, onion, garlic + bacon. stir.
add celery + carrot. cook for 5 min
add tomatoes, kidney beans + stock. cook till veggies are soft, add herbs before serving.
