high-rise ham + potato pie

650gm potatoes, peeled (pink waxy type is best for this recipe)
2 x 400gm shortcrust pastry sheets
1 brown onion diced
1 cup grated cheddar cheese
250gm sliced ham
2 tbsp chopped thyme leaves
1/2 cup flat leaf parsley leaves
4 eggs
1 cup cream

preheat oven to 180˚C. line greased 22cm round spring-form pan with pastry.
cook potatoes in microwave till tender, slice thickly
mix onion, cheese, chopped ham, thyme + parsley
add 1/3 of potato top with ham mixture. repeat till finished
mix cream + eggs + pour in
top with remaining pastry, cut a cross in the middle. brush with egg or milk.
bake for 1 hour
