lemon tea muffins

there is something about lemony cakes and desserts that i absolutely adore! maybe more than chocolate......maybe not

1 cup self raising flour
1/2 cup sugar
1/2 teaspoon salt
1/2 cup fresh lemon juice
2 eggs
finely grated rind of 1 lemon
60g butter at room temperature

topping:
1/4 cup melted buter
1 tablespoon lemon juice
1/2 cup caster sugar

mix self raising flour, sugar and salt.
in a separate bowl, add lemon juice, eggs and lemon rind to melted butter
stir into dry ingredients
spoon batter into prepared muffin tin and bake 15-20min in 190•C
whilst waiting for the muffins to cook, mix all your topping ingredients in a separate bowl
when cooked, remove from the oven
poke the muffins randomly with a skewer
pour topping over the muffins and cool in tray

serve with a nice cuppa tea
