tors tuna sashimi

There is nothing quite like fresh tuna and one of the things I love about living in Fiji is that you can have access to some of the freshest tuna in the world.
I never thought of having tuna sashimi as a main meal until 2011. Shayne and I were in Noumea competing in the Pacific Games and was invited to a friends house of Tahitian decent who served us sashimi with hot rice. The contrast of the hot rice with cold sashimi was amazing. I didn't get the chance to get the recipe off them but on returning home, have tried to duplicate it and this may not be what i had that night but it's still pretty amazing (at least i think).


fresh tuna loin
bunch of coriander/cilantro
2 sprigs spring onions
roasted sesame seed (optional)
wasabi/chilli to taste (optional)
2 cloves crushed/minced garlic
1 inch fresh ginger grated
1/2 cup light soy sauce
2 - 3 drops sesame oil
1/4 cup olive oil

slice tuna to about 1/2 cm thick and to bite size. spread over shallow serving bowl. cling wrap and refrigerate whilst you prepare the sauce and cook the rice.

in a bowl mix:

  • finely chopped coriander (use everything - leaves, stalk and roots)
  • crushed garlic
  • finely chopped spring onions
  • grated ginger
  • sesame seeds
  • wasabi paste/chilli
  • garlic
  • soya sauce and
  • sesame oil
set a side

In a saucepan, heat your 1/4 oil till it's smoking hot. Pour sauce over the fish and hot oil evenly over the fish in sauce.

Serve immediately with hot rice.

  • the garlic is available from any supermarket. 
  • spring onions, coriander and fresh ginger are easily available at the market.
