semi- sundried tomatoes

a couple of weeks ago, my mother-in-law gave me a huge bag of cherry tomatoes. after a week of eating tomatoes we hadn’t made a dent on it so I thought i’d try and make sundried tomatoes before they they go off (we had also been blessed with great weather). i cut the tomatoes in half and mixed in crushed garlic. spread them out on a tray (i used my grilling tray so that the juice from the tomatoes drained through the holes) and left it out in the sun to dry. it took me two days of drying to get it to how i like it. drizzled olive oil over the tomatoes, transferred it to a bottle and refrigerate.
