spinach + spud quiche

3 eggs
3/4 tsp salt
1 cup milk
1/2 cup self raising flour
2-3 potatoes - cooked
1 cup silver beet spinach (or bele) cooked
1 cup grated parmesan cheese
1 large onion
2 cloves garlic
1 tbsp butter

heat your butter in a saucepan, add onion + garlic till onion is lightly transparent, add silver beet until tender. set aside
put beaten eggs, salt, milk and self raising flour in a bowl. stir just enough to combine
add potato chunks, silver beet and 1/2 cup cheese. pour into greased flan. sprinkle the remaining cheese on the top and bake in oven on 180˚C for 30min
